Gluten-Free Peanut Butter Cookies
Yield: about 35-40 cookies
2 cups, Peanut Butter
3/4 cup, White Sugar
3/4 cup, Brown Sugar
1/2 tsp, Baking Soda
1/2 tsp, Vanilla Extract
3, Eggs
Combine all ingredients. Drop by tablespoons onto greased baking sheet (or baking sheet lined with parchment paper). Bake in 350°F oven for about 10-12 minutes, or until lightly browned. Let the cookies cool on the baking sheet for 5 to 10 minutes before removing. Enjoy!
Optional: Melt some dark chocolate dipping wafers in a double boiler. Dip the cookies into the chocolate, or pipe the chocolate onto the cookies (as seen in the picture) using a piping bag and a small piping tip. If dipping the cookies, place onto some wax paper after.
