Wheat-free Chocolate Chip Cookies
-May contain gluten!!! (unless the oats are certified gluten-free)
Yield: about 45 cookies
3/4 cup, Butter
1 cup, Brown Sugar
2, Eggs
1 tsp, Vanilla Extract
2 1/2 cups, Oats (see note)
1/2 cup, Corn Flour
2 tbsp, Corn Starch
3/4 tsp, Salt
1 tsp, Baking Soda
1 1/4 cup, Chocolate Chips
3/4 cup, chopped Pecans or Walnuts (optional)
Cream butter and sugar together. Beat in eggs one at a time. Add vanilla.
Place oats in blender and blend on high until finely ground.
Stir together ground oats, corn flour, corn starch, salt, and baking soda. Add to creamed mixture and mix to combine. Stir in chocolate chips and nuts. Drop by spoonfuls onto greased baking sheet (or baking sheet lined with parchment paper). Bake in 350°F oven for about 10-15 minutes. Enjoy!

*Note: Depending on the blender, adding the full 2 ½ cups of oats all at once may be too much. Maybe blend 1 1/4 cup of oats at a time.
