Whole Wheat Pita Bread
Yield: 10
2 cups, Whole wheat flour
2 1/4 tsp (or 1/4 oz. package), Active dry yeast
1 1/4 cups, warm water
1/2 tsp, salt
1 1/2 cups (more or less), All purpose flour (or whole wheat flour)
Measure first 4 ingredients into large bowl. Mix Well.
Work in enough remaining flour until dough pulls away from sides of bowl. Turn out onto floured surface. Kneed 4-5 minutes until smooth and elastic. Cut and shape into 10 balls. Roll out each ball ¼ inch thick and 5 to 6 inches in diameter on lightly floured surface. Both sides should be lightly covered in flour. Place on cornmeal dusted baking sheet and cover with tea towel. Let stand in oven with light on and door closed for about 35 minutes. Bake in 500° F oven on bottom rack for 5 minutes. Repeat until all are baked. Wrap in tea towel for 3 minutes as they are removed from oven. Cool. This bread is great with hummus.
